Let me start by saying the machaca was awesome! Derek took some to work for a pot luck, and he said it got lots of compliments. He might just be saying that, but I thought it was pretty freaking good.

I had to drink a cup of the hot, spicy broth by itself, it was so good. I saved all the broth for another time (soup, maybe?). We've had machaca enchiladas, machaca chimichangas, machaca nachos...and there's still some in the freezer!

Here's a pic of the chimichangas. I used the method, not necessarily the ingredients.


This recipe for chicken scaloppine with lemon glaze was the best thing I've made in a loooong time. All three of us thought it was delicious. The lemon flavor was just right. Only wish it would have made more! We will definitely have this again soon.


The cauliflower is just a recipe in my head. It's some cauliflower (or broccoli), tossed with a little olive oil to coat, and some S&P. Bake it in a 400F oven for about 15 minutes, shaking it around once during that time. After about 15 minutes, take the pan out of the oven and sprinkle a (generous) amount of parmesan cheese on the cauliflower. Then return it to the oven for another 5 minutes or so, until the cheese has crusted over the cauliflower (okay, that sounds gross, but you know what I mean). Then eat it. Make sure you eat the little bits of cheese in the bottom of the pan, too. They're the best part.

Strange bedfellows


So, we finally got the crib up in the girls' room. And it wasn't nearly as hard to put together the second time.



I put BG in the crib for this photo.

But now she won't stay out. And LG does not like to share her bed.

*FTR, I know my 2.5 year old still has a sippy and a binky. It's what's working for us right now.

As it is, I'm having to keep LG out of the room they share until BG goes to sleep in order to avoid any drama. Which, if you know the bedtime rituals and sleeping habits of any 2 year old, can sometimes be a drawn-out process.

Can't wait until they can have rooms of their own!

Lazy, lazy


Okay, so I've been really lazy lately when it comes to the blog.

I apologize.

On with the blogging...

We had fun walking around the neighborhood, but Big Girl's been talking about ghosts and witches and monsters and spooky stuff ever since. I already think our place is haunted...I don't need her reinforcing the idea.

So, this is not the best one ever...but I'll make it work. In the basket this week is:
1 cantaloupe
7 bananas
5 Fuji apples
6 Valencia oranges
11 lemons
1 pint strawberries
1 pomegranate
1 head cauliflower
4 tomatoes
1 head green leaf lettuce (HUGE!)
1 bunch collard greens
4 cucumbers

Wow. 11 lemons, 4 cucumbers, and collards. I have a few ideas (lemon bars, lemon chicken, marinated cucumbers), but I need some help. If you have a yummy recipe that incorporates any of these ingredients, leave it in the comments!

I know you're all anxiously awaiting an update on the machaca, Halloween and my co-op items from today, but you'll have to wait a little longer! We're having minor computer issues today that are affecting the upload of pictures. And what's a blog post without pictures?
